Preparation Steps
Prepare the Chicken
Season the chicken breasts with salt, pepper, and garlic powder. Heat olive oil in a grill pan over medium heat. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear.
Melt the Cheese
Once the chicken is cooked, place the sautéed vegetables on top of each chicken breast and sprinkle the Cheddar and Monterey Jack cheese on top. Cover the pan with a lid for about 2-3 minutes to melt the cheese.
Toast the Buns
While the cheese is melting, toast the burger buns on a separate pan until golden brown. Spread mayonnaise on the bottom half of each bun.
Assemble the Sandwich
Once the cheese has melted, carefully place each chicken breast with the veggies and cheese on the bun. Top with the other half of the bun and serve immediately.
