Prepare espresso
Brew a single shot (about 1 oz) of espresso immediately before mixing. Use a fresh extraction so it is hot and has a good crema. If you can't pull espresso, use very strong hot coffee concentrated to about 1 oz.
Combine and shake
Add ice to a cocktail shaker, then pour in 2 oz Grey Goose vodka, 1 oz Borghetti Caffè, 1 oz hot espresso, and 0.25 oz simple syrup. Immediately seal the shaker and shake vigorously for 12–18 seconds. The goal is to both chill the mixture and create a silky foam from the hot espresso's crema emulsifying with the alcohol.
Strain and serve
Dump the ice water from your chilled glass (if used). Double-strain the cocktail into the chilled coupe/martini glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and ensure a smooth top.
Garnish
Float three coffee beans on the foam for garnish, spacing them evenly. Serve immediately.
