Method

Prep the tomatoes and basil

Halve tomatoes

Wash the cherry tomatoes and cut them in half (or quarter them if large). Place in a medium bowl.

Tear basil

Stack basil leaves, roll into a tight cylinder (chiffonade) or simply tear by hand into bite-sized pieces. Add to the bowl with tomatoes.

Add 1 tablespoon olive oil, 1/2 teaspoon sea salt, and 1/4 teaspoon freshly ground black pepper to the tomatoes and basil. Toss gently to combine and let sit at room temperature for 10–15 minutes to macerate and release juices.

Prepare the burrata and assemble

Bring burrata to room temperature

Remove burrata from refrigerator 15–20 minutes before serving so its center softens and flavor opens up.

Arrange burrata

Place the burrata balls on a shallow serving plate or platter, leaving a little space between them if using two pieces.

Top with tomato mixture

Spoon the macerated tomato and basil mixture over and around the burrata, allowing some of the juices to mingle with the cheese.

Drizzle the remaining 2 tablespoons of olive oil evenly over the burrata and tomatoes. Drizzle the balsamic glaze over the top in a thin ribbon or dot pattern. Season with the remaining 1/2 teaspoon sea salt (or flaky sea salt) and the remaining 3/4 teaspoon black pepper to taste.

If using optional finishing ingredients: sprinkle lemon zest over the cheese, scatter a pinch (about 1/4 tsp) of red pepper flakes for heat, and finish with flaky sea salt for texture.

Serve

Serve immediately with crusty bread or crostini for spreading the creamy burrata and tomatoes. Encourage breaking open the burrata so its creamy center mixes with the tomato juices.

Optional: toast bread

If serving with crostini, preheat oven to 375°F (190°C). Brush bread slices with a little olive oil and toast on a baking sheet for 6–8 minutes until golden and crisp. Rub with a cut clove of garlic after toasting for extra flavor, if desired.
