Prepare the Spice Rub

In a small bowl, combine the li hing mui powder, brown sugar, garlic powder, onion powder, salt, and black pepper. Mix well.

Season the Ribs

Rub the spice mixture evenly over the pork spare ribs. Ensure the ribs are well coated. Let them marinate for at least 1 hour, or overnight for best results.

Preheat the Oven

Preheat your oven to 300°F (150°C).

Bake the Ribs

Place the seasoned ribs on a baking sheet lined with aluminum foil. Cover with another sheet of foil and bake for 2.5 to 3 hours, until tender.

Make the Slaw

While the ribs are baking, prepare the slaw. In a large bowl, combine the shredded cabbage, diced pineapple, chopped jalapeño, and cilantro.

Dress the Slaw

In a small bowl, whisk together the lime juice, olive oil, and salt. Pour over the slaw and toss to combine.

Finish the Ribs

After the ribs are tender, remove the top layer of foil and increase the oven temperature to 400°F (200°C). Bake for an additional 15-20 minutes to caramelize the outside.

Serve

Remove the ribs from the oven, let them rest for a few minutes, then cut into portions. Serve with the pineapple-jalapeño slaw on the side.
