Preparation and Cooking

Boil the Potatoes

Place the baby potatoes in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly.

Preheat the Oven

Preheat your oven to 425°F (220°C).

Prepare the Vegetables

While the potatoes are cooling, thinly slice the yellow onion and sweet bell pepper.

Caramelize the Onions and Peppers

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and peppers, and cook, stirring occasionally, until caramelized, about 15-20 minutes. Season with salt and pepper, and remove from heat.

Smash the Potatoes

Once the potatoes are cool enough to handle, place them on a baking sheet lined with parchment paper. Using the bottom of a glass or a potato masher, gently smash each potato until flattened but still intact.

Season and Bake

Drizzle the smashed potatoes with the remaining olive oil, and sprinkle with salt and pepper. Bake in the preheated oven for 20-25 minutes, or until crispy and golden brown.

Serve

Remove the potatoes from the oven, top with the caramelized onions and peppers, and serve with Romesco sauce drizzled over the top.
