Prepare glass

Fill a large wine glass about three-quarters full with large ice cubes. Use enough ice that the glass is well-chilled and the liquid will remain cold without diluting too quickly.

Add Aperol

Measure and pour 3 tablespoons (about 1.5 fl oz) of Aperol over the ice. Swirl gently to coat the ice and chill the liqueur briefly.

Add sparkling wine

Carefully pour 4 ounces of chilled sparkling wine (Prosecco recommended) into the glass. Pour gently down the side of the glass to preserve bubbles.

Top with soda

Add 1 ounce of chilled soda water to the top of the glass to lengthen and lighten the cocktail. If you prefer a touch sweeter, add up to 1/4 teaspoon of simple syrup now and stir gently once.

Garnish and serve

Garnish with one fresh orange wedge or a thin orange wheel twisted on the rim. Serve immediately with a stirring stick or straw so the drink can be lightly mixed at the table.
