Mussel Escabêche

Prepare the Mussels

In a pot, combine mussels and white wine. Cover and steam until mussels open. Discard any that do not open.

Make the Escabêche

In a bowl, whisk together red wine vinegar, olive oil, minced garlic, parsley, salt, and pepper. Mix in the steamed mussels and let marinate for at least 1 hour.

Oysters

Shuck the oysters and place them on a serving platter. Serve with lemon wedges and hot sauce.

Tuna Crudo

Prepare the Tuna

Slice the fresh tuna into thin pieces and arrange on a plate. Drizzle with olive oil and lime juice, and sprinkle with sea salt.

Garnish

Add sliced avocado and microgreens on top for garnish.

Shrimp Cocktail

Cook the Shrimp

Boil shrimp until they are pink and opaque, about 2-3 minutes. Drain and chill in ice water.

Serve shrimp on a platter with cocktail sauce and lemon wedges.

Cured Salmon

Prepare the Salmon

Arrange cured salmon on a plate. Top with capers, thinly sliced red onion, and dill.

Crab Dip with Ritz Crackers

Make the Crab Dip

In a bowl, mix crab meat, cream cheese, mayonnaise, lemon juice, and Worcestershire sauce until smooth.

Serve with Ritz crackers on the side.
