Preparation of Vegetables
Prepare Zucchini and Onion
Wash the zucchini and cut them into thin slices. Peel the onion and slice it into rings. Set aside.

Make the Batter
In a large bowl, mix the rice flour, cornstarch, and salt. Gradually add the cold sparkling water, whisking until the batter is smooth and slightly thick.
Frying
Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Vegetables
Dip the zucchini slices and onion rings into the batter, ensuring they are well coated. Carefully place them in the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes.
Drain and Serve
Remove the fried vegetables with a slotted spoon and drain on paper towels. Serve hot with lemon wedges on the side.
