Lobster Filling Preparation

Prepare the Lobster Mixture

In a large bowl, combine the chopped lobster meat, mayonnaise, lemon juice, diced celery, chopped chives, salt, and black pepper. Mix well and refrigerate for at least 30 minutes to allow the flavors to meld.

Brioche Buns Preparation

Toast the Buns

Preheat a skillet or grill over medium heat. Brush the brioche buns with melted butter on the cut sides and toast them in the skillet until golden brown.

French Fries Preparation

Fry the Potatoes

In a large pot, heat the vegetable oil to 350°F (175°C). Fry the cut potatoes in batches until golden and crispy, about 5-7 minutes per batch. Remove from the oil and drain on paper towels. Season with salt while hot.

Assembly

Fill each toasted brioche bun with the chilled lobster mixture. Serve immediately alongside hot French fries.
