Prep the Sweet Potatoes
Peel the sweet potatoes and cut them into thin waffle fry shapes using a waffle fry cutter or a knife. Aim for uniformity in size for even cooking.
Soak the Fries
Soak the cut sweet potato fries in cold water for at least 30 minutes. This helps remove excess starch and results in a crispier texture.
Season the Fries
Drain the sweet potatoes and pat them dry with a kitchen towel. In a large bowl, toss the fries with olive oil, salt, paprika, garlic powder, black pepper, and cornstarch until well coated.
Bake the Fries
Preheat your oven to 425°F (220°C). Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, turning halfway through, until golden brown and crispy.
