Preparation of Shrimp

Cook the Shrimp

In a large pot, bring water to a boil. Add shrimp and cook for 2-3 minutes or until shrimp are pink and opaque. Drain and place shrimp in a bowl of ice water to stop the cooking process. Once cooled, drain again and chop into bite-sized pieces.

Mixing the Cocktail

Combine Ingredients

In a large mixing bowl, combine the cooked shrimp, tomato juice, ketchup, fresh lime juice, diced red onion, diced cucumber, diced avocado, chopped cilantro, and jalapeño (if using). Mix gently until all ingredients are well combined.

Season the Mixture

Add salt and black pepper to taste. Mix again to ensure seasoning is evenly distributed.

Chill the Cocktail

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld.

Spoon the shrimp cocktail mixture into serving bowls. Garnish with lime wedges and serve with tortilla chips on the side.
