Method
Preparing the Jamón
Temperature and rest
Remove the Jamón Ibérico de Bellota from refrigeration and let it rest at room temperature for 30–60 minutes. Allowing the fat to warm slightly brings out aroma and flavor.
Set up
Place the jamón on a stable cutting surface or jamonero (ham stand) with the hoof or narrower end up if planning to slice over several days, or lay a boneless portion flat if slicing immediately. Ensure your charcuterie knife is sharp and clean.
Trim outer rind (if needed)
If the exterior has a thick rind or hardened fat layer, use a small sharp knife to carefully remove a strip about 2–3 cm wide along the area you'll slice, exposing the firm, glossy fat beneath. Keep the removed fat pieces to cover exposed meat between servings to preserve it.
Slicing technique
Using a long, flexible slicing knife, cut very thin, almost translucent slices. Aim for slices about 1–2 cm wide and paper-thin in thickness. Slice with long, even strokes toward you (or away, depending on comfort), rotating the ham as needed to maintain a clean surface. Arrange slices loosely so they slightly overlap — this increases perceived tenderness and aroma.
Preparing Accompaniments
Cheese
Cut the Manchego into thin wedges or small rectangles to place on the board. Serve at room temperature to best complement the jamón (remove from fridge 20–30 minutes prior).
Nuts and pickles
Place Marcona almonds and cornichons or pickled vegetables in small bowls or piles on the board. These provide textural contrast and a bright or crunchy counterpoint to the fatty ham.
Fruit and paste
Slice fresh figs into halves or quarters, or cut quince paste (membrillo) into 1 cm-thick slices. These sweet elements balance the savory, nutty flavors of the jamón.
Finishing touches
Scatter microgreens or parsley in small bunches for color. Lightly grind black pepper over a few slices of jamón if desired. Offer a small pinch of flaky sea salt or smoked sea salt on the side for guests who want a touch more seasoning (use sparingly; jamón is already salty).
Plating and Serving
Arrange the thinly sliced Jamón Ibérico de Bellota on the wooden board in small, overlapping piles or rosettes. Place cheese, bread, nuts, pickles, fruit or membrillo, and microgreens around the ham to create varied textures and flavors. Drizzle 20–30 ml extra-virgin olive oil lightly over bread or a few cheese slices if desired.
If the jamón is a whole piece and you will serve over multiple days, cover the exposed meat surface with the reserved trimmed fat and a clean cloth; store at cool room temperature or in the refrigerator per producer recommendations to preserve quality.
