Preheat and prepare

Preheat the oven to 350°F (175°C). Lightly grease an 8-inch round cake pan or line it with parchment paper and set aside.

In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, fine sea salt, and turmeric until evenly combined. The turmeric is used sparingly to impart a warm golden hue without a strong taste.

In a separate large bowl, beat the eggs lightly. Add the whole milk, melted butter, and vanilla extract; whisk until smooth and homogeneous.

Pour the dry ingredients into the wet ingredients. Stir gently with a spatula until just combined; do not overmix. Scrape the bottom and sides to ensure there are no pockets of dry flour.

Pour the batter into the prepared pan, smoothing the top with an offset spatula or the back of a spoon so the surface is even.

Bake in the preheated oven for 22–28 minutes, or until the top is golden and a toothpick inserted into the center comes out with a few moist crumbs (not wet batter). Rotate the pan halfway through baking if your oven has hot spots.

Remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then run a knife around the edges, invert onto a wire rack, remove the parchment (if used), and flip right side up. Let cool completely (about 30 minutes) before glazing so the glaze won’t run off excessively.

Golden Glaze & Finish

While the cake cools, prepare the glaze: in a small saucepan over low heat combine the honey, lemon juice, and 1 tablespoon unsalted butter. Warm gently, stirring, until the butter melts and the mixture is smooth and slightly thinned (about 2–3 minutes). Do not boil.

Remove the saucepan from heat and stir in the finely grated lemon zest. Taste and adjust balance: add a little more lemon juice if you want brighter acidity, or an extra teaspoon of honey if you prefer sweeter.

Place the cooled cake on a serving plate or cake stand. Using a pastry brush or the back of a spoon, brush the warm honey-lemon glaze evenly over the top of the cake so it soaks in and gives a glossy golden finish. Let the glaze set for 5–10 minutes.

Sprinkle a light pinch of flaky sea salt over the glazed top to enhance the flavors and accent the golden notes.

Optional Garnish & Serve

If using, scatter the toasted sliced almonds across the top for crunch and a nutty contrast. Garnish with fresh mint leaves for color and aroma.

Slice into 8 even pieces. Serve at room temperature alongside tea or coffee. Leftovers can be stored in an airtight container at room temperature for 2 days or refrigerated for up to 5 days; bring to room temperature before serving for best texture.
