Mix and shape patties

In a medium bowl, combine 1 lb ground beef, 1 tsp kosher salt, 1/2 tsp black pepper, 1 tbsp Worcestershire sauce, and 1/2 tsp garlic powder. Gently mix just until combined — avoid overworking. Divide the mixture into 4 equal portions and shape into patties about 3/4-inch thick, making a slight indentation in the center of each patty to prevent puffing during cooking.

Cook patties

Heat a large skillet or cast-iron pan over medium-high heat and add 1 tbsp vegetable oil. When shimmering, add the patties (do not overcrowd; cook in batches if needed). Cook for 3-4 minutes on the first side without moving, flip, then cook 2-3 minutes more. In the last minute of cooking, place a slice of cheddar on each patty and cover the pan or reduce heat to low to melt the cheese. Internal temperature should reach 160°F (71°C) for well-done beef.

Pineapple & Glaze

Prepare glaze

In a small bowl, whisk together 2 tbsp brown sugar, 1 tbsp soy sauce, and (optional) 2 tbsp pineapple juice until combined.

Caramelize pineapple

Heat a separate skillet or grill pan over medium heat and add 1 tbsp unsalted butter. When melted and foaming, add the pineapple rings in a single layer. Sprinkle each ring evenly with the brown sugar mixture or spoon glaze over each. Cook 2-3 minutes per side until golden and caramelized, spooning glaze over the rings as they cook. Remove from heat and keep warm.

Buns & Assembly

Toast buns

Spread the softened 1 tbsp butter on the cut sides of the 4 buns. Place buns cut-side down on a clean skillet or griddle over medium heat and toast until golden, about 1-2 minutes. Remove and set aside.

Prepare condiments and veggies

Slice the tomato into 4 even slices and thinly slice the 1/4 red onion into rings. Rinse and dry 4 lettuce leaves. In a small bowl, combine 1/4 cup mayonnaise with optional 1-2 tbsp pineapple juice or 1 tsp of the glaze for a lightly flavored mayo; mix well. If using ketchup, have 2 tbsp ready for serving.

Assemble burgers

Place the toasted bottom bun on a plate. Spread a tablespoon of the mayonnaise mixture on the bottom bun. Add a lettuce leaf, then a tomato slice, then the cheeseburger patty. Place one caramelized pineapple ring on top of the patty, then a few onion rings. Spread a little ketchup (to taste) on the top bun and close the burger. Repeat for remaining burgers. Serve immediately.
