Prepare poaching or cooking liquid
In a medium saucepan combine 6 cups water and 1 cup beer (if using). Add 1/2 teaspoon salt and bring to a gentle simmer over medium heat. Do not boil vigorously — you want small bubbles so the frankfurters heat evenly without splitting.
Poach the frankfurters
Slide the frankfurters into the simmering liquid. Reduce heat to low so the surface barely moves. Poach gently for 5–7 minutes until heated through (internal temperature about 140°F / 60°C). If you prefer a grilled or pan-seared finish, remove after poaching and proceed to next step.
Pan-sear or grill (optional, for color and texture)
Heat 1 tablespoon vegetable oil or butter in a skillet over medium-high heat, or preheat a grill to medium. If using a skillet, place poached frankfurters in the pan and sear 1–2 minutes per side until they develop a light brown crust and some char marks. If grilling, place directly on grates and cook 1–2 minutes per side, turning to get even marks. This step is optional but recommended for flavor and appearance.
Prepare toppings
While frankfurters cook, mix 1/2 cup yellow mustard and 1/2 cup ketchup in a small bowl if you want a simple sauce, or keep them separate as condiments. Combine 1/4 cup finely chopped onion with 1/2 cup thinly sliced dill pickles; season with 1/4 teaspoon black pepper and 1/2 teaspoon paprika (optional) and toss briefly. Taste and adjust salt if needed.
Serve
Serve immediately while hot, with extra mustard, ketchup, and pickle slices on the side. Leftovers can be refrigerated in an airtight container for up to 3 days; reheat gently in simmering water or a skillet.
