Coffee option
Heat water
Bring fresh water to a boil and then let it sit 30 seconds to 1 minute to reach about 195–205°F (90–96°C). Use filtered water if available for best flavor.
Measure and prepare coffee
Measure 2 tablespoons of medium-ground coffee per 8–12 oz cup (this recipe uses 2 tbs for a ~12 oz cup). Place grounds in your brewer of choice (drip basket, pour-over cone, French press).
Brew
Pour hot water evenly over the coffee grounds and brew according to method: - Drip/pour-over: pour in a slow, circular motion until 12 oz is brewed (about 2.5–3.5 minutes). - French press: pour all water, stir gently, steep 4 minutes, then press. - Single-serve immersion (cowboy/coarse grounds): steep 4 minutes and strain.
Tea option
Choose water temperature
Heat water to the appropriate temperature for the tea type: 175–185°F (80–85°C) for green tea, 190–200°F (88–93°C) for oolong, 200–212°F (93–100°C) for black/herbal. If you don't have a thermometer, bring to a boil and let sit 30–60 seconds for green/oolong or use boiling for black/herbal.
Steep tea
Place 1 tea bag or the equivalent loose-leaf amount (typically 1 tsp for green/white, 1–1.5 tsp for black) in a cup. Pour 8 oz of hot water over the tea. Steep for the recommended time: 1–3 minutes for green, 3–5 minutes for oolong, 3–5 minutes for black, 5–7+ minutes for herbal. Adjust time for strength.
