Prep potatoes

Preheat oven to 230°C (450°F). Wash and peel the potatoes if desired. Cut each potato into even sticks about 1/2 inch (1.2 cm) thick. Place cut potatoes into a large bowl of cold water and soak for 20–30 minutes to remove surface starch.

Dry and coat

Drain the potatoes and pat completely dry with kitchen towels. Return to a dry bowl and sprinkle with the cornstarch, tossing to coat evenly. Add 3 tablespoons vegetable oil, sea salt, black pepper, garlic powder, and paprika. Toss until each chip is lightly and evenly coated.

Roast

Spread the potatoes in a single layer on a large baking sheet lined with parchment or lightly oiled. Make sure pieces are not overcrowded (use two sheets if necessary). Roast in the preheated oven for 20–25 minutes, turning once halfway through, until golden and crisp on the edges.

Finish

Remove chips from oven, immediately taste and adjust seasoning with a pinch more salt if needed. Sprinkle chopped fresh parsley over the chips and toss lightly. Keep warm while you prepare the burgers, or serve immediately.

Make the patties

In a bowl combine ground beef, salt, black pepper, Worcestershire sauce, and finely grated onion. Mix gently with your hands until just combined; avoid overworking. Divide into 4 equal portions (about 5 oz / 140 g each) and form into patties slightly larger than the buns, pressing a shallow dimple in the center of each to prevent bulging while cooking.

Cook

Heat 1 tablespoon vegetable oil in a heavy skillet or cast-iron pan over medium-high heat. When the oil is shimmering, add the patties (work in batches if necessary) and cook about 3–4 minutes per side for medium, or until desired doneness. If adding cheese, place a slice on each patty during the last minute of cooking and cover the pan briefly to melt.

Rest

Transfer cooked patties to a plate and let rest for 3–4 minutes to redistribute juices.

Burger Build & Serving

Toast buns

Spread softened butter on the cut sides of the buns. Toast in a dry skillet over medium heat until golden, about 1 minute per side, or place under a broiler for 30–60 seconds — watch carefully to avoid burning.

Assemble burgers

On the bottom bun place a lettuce leaf, then a rested burger patty with melted cheddar. Top with a tomato slice, red onion rings, pickle slices, ketchup and mustard to taste, then cap with the top bun.

Serve

Plate each burger with a generous portion of the crispy oven chips. Serve immediately while hot.
