Whisk eggs
Crack 4 large eggs into a medium bowl. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1 teaspoon black pepper. Whisk vigorously until mixture is uniformly yellow and slightly frothy, about 20–30 seconds. This aeration gives the eggs a lighter texture.
Fold in cheeses and aromatics
Gently fold in 1 cup grated sharp cheddar, 1/2 cup shredded mozzarella, 2 tablespoons finely grated Parmesan, 2 tablespoons sliced chives, and 1/4 teaspoon red pepper flakes into the egg mixture until evenly distributed. Do not overmix; aim to keep some pockets of cheese for molten texture.

Preheat pan
Place a 10-inch nonstick or well-seasoned skillet over medium-low heat. Add 1 tablespoon unsalted butter and 1 teaspoon olive oil. Allow butter to melt and foam but not brown—about 30–45 seconds. The oil helps prevent burning and improves browning control.
Low-and-slow cooking
Using a silicone spatula, gently pull the set edges toward the center while tilting the pan so uncooked egg flows to the edges. Repeat every 15–20 seconds for about 2–3 minutes until most of the egg is set but the top still looks slightly glossy. Finish under lid
