Main Sandwich

1

Prepare the bacon

Lay the 6 slices of thick-cut bacon in a single layer in a cold skillet or on a rimmed baking sheet if using the oven. For stovetop: cook over medium heat, turning occasionally, until evenly browned and crisp, about 10–12 minutes. For oven: preheat to 400°F (200°C) and bake on a rack set over the baking sheet for 15–20 minutes until crisp. Transfer bacon to a paper towel–lined plate to drain and blot any excess fat.

2

Toast the bread

Spread the unsalted butter evenly onto one side of each bread slice. Heat a clean skillet over medium heat and place bread butter-side down. Toast until golden brown, about 2–3 minutes per side, or toast in a toaster until golden. Remove and keep warm.

3

Season the mayo

In a small bowl, combine 3 tablespoons mayonnaise with 1/8 teaspoon kosher salt and 1/4 teaspoon freshly ground black pepper. Stir until smooth and taste for seasoning; adjust salt or pepper to taste.

4

Assemble the sandwich

Spread the seasoned mayonnaise evenly on the non-buttered sides of both toasted bread slices. On one slice, place the leaf of lettuce (if using) and the tomato slices (if using). Layer the hot bacon on top of the tomato/lettuce. Top with the second slice of bread, mayo-side down. Press gently to compact.

5

Slice the sandwich in half if desired and serve immediately while bacon is warm and the bread is crisp.
