Chill and prepare

Place carbonated water in the refrigerator until well chilled (at least 1 hour) so it retains carbonation when mixed. If using ice, have ice cubes ready and chilled.

Measure juices and syrup

In a small measuring cup or jigger combine 20 ml fresh lemon juice, 10 ml fresh lime juice and 20 ml simple syrup. Taste and adjust: for a sweeter soda increase syrup by 5–10 ml; for tarter, add 5 ml more lemon or lime.

Assemble the drink

Fill a 500 ml (approx.) serving glass or bottle with 4–6 ice cubes if desired. Pour the lemon-lime-syrup mixture over the ice (or directly into the chilled bottle if not using ice). Slowly add 450 ml chilled carbonated water to the glass/bottle to reach about 500 ml total volume. Stir gently once with a long spoon 4–5 slow strokes to combine without flattening the soda.

Garnish and serve

Garnish with one lemon or lime wheel on the rim and gently slap the mint leaves between your palms to release aroma and add them to the drink if using. Serve immediately to retain carbonation.

Homemade Simple Syrup (optional)

Combine 100 g granulated sugar and 100 ml water in a small saucepan over medium heat. Stir constantly until sugar fully dissolves and the mixture is clear. Do not boil for long — once sugar dissolves, remove from heat and let cool to room temperature. Transfer to a clean jar and refrigerate; syrup will keep for up to 2 weeks. Use 20 ml of this syrup for the recipe above.
