Prepare and marinate

Pat the fish fillets dry with paper towels. In a shallow dish, whisk together 2 tbsp lemon juice, 1 tbsp olive oil, 1 tsp smoked paprika, minced garlic, 3 tsp salt, and 1 tsp black pepper. Place fillets in the dish and turn to coat. Cover and refrigerate for 20–30 minutes to let flavors penetrate (no more than 30 minutes for delicate fish).

Preheat and cook

Preheat oven to 425°F (220°C). Heat a large ovenproof skillet over medium-high heat and add 1 tsp olive oil. When hot, gently place fish fillets presentation-side down and sear 1–2 minutes until a light crust forms. Transfer skillet to the preheated oven and bake 6–10 minutes (depending on thickness) until the fish is opaque and flakes easily with a fork (internal temperature ~140–145°F / 60–63°C). Remove fish to a warm plate and tent loosely with foil.

While the fish is marinating or baking, combine 1 cup mayonnaise, 1/4 cup Greek yogurt, 2 tbsp chopped dill, 2 tbsp chopped parsley, 1 tsp lemon zest, 1 tbsp lemon juice, 1 tsp hot sauce, 1/2 tsp smoked paprika, 1 tsp honey, 1/2 tsp salt, and 1/4 tsp black pepper in a bowl. Whisk until smooth and adjust seasoning to taste. Chill in the refrigerator until ready to use. The sauce balances creaminess, citrus, and a touch of heat to evoke the 'Sputnik' personality.

Make the crispy topping: in a bowl mix 1 cup panko, 1/4 cup grated Parmesan, 2 tbsp melted butter, 1/2 tsp lemon zest, 1/2 tsp garlic powder, 1/4 tsp salt, and 1/4 tsp black pepper until the crumbs are evenly moistened.

After searing and while fish is in the oven (or during a final broil), sprinkle the panko mixture over the top of the fish fillets in the ovenproof skillet. Return to the oven on the top rack and broil for 1–2 minutes until the topping is golden and crisp. Watch carefully to avoid burning. If your fillets were removed after baking, place them on a baking sheet, top with mixture, and broil until crisp.

Garnish & Serving

Plate the fish: Spoon a generous dollop (about 2–3 tbsp) of Sputnik sauce onto each plate or smear it as a bed. Place the topped fish fillet on the sauce. Garnish with microgreens or chopped chives and a lemon wedge. Serve immediately so the topping stays crisp.
