Preparing the Mussels
Clean the Mussels
Rinse the mussels under cold water, scrubbing the shells to remove any debris. Remove the beards if present.
Cook the Shallots and Garlic
In a large pot, heat a tablespoon of olive oil over medium heat. Add minced garlic and chopped shallots, sautéing until translucent.
Add Pale Ale and Mussels
Pour in the pale ale and bring to a boil. Add the cleaned mussels, cover, and cook for about 5-7 minutes until they open.
Make the Garlic Cream Sauce
Remove the mussels and set them aside. Add heavy cream and chopped fresh herbs to the pot, stirring until the sauce thickens slightly. Season with salt and pepper.
Preparing the Fries
Cut and Fry the Potatoes
Cut the potatoes into thick fries. Toss them in olive oil and salt, then spread them on a baking sheet. Bake at 425°F (220°C) for 25-30 minutes, flipping halfway through until crispy.
Making the Aioli
Mix Ingredients
In a bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Mix until smooth.
