Cook the Duck

In a large saucepan, combine the duck legs with the duck fat, shallots, garlic, thyme, bay leaves, salt, and black pepper. Cover and cook over low heat for about 2 to 3 hours until the duck is very tender.

Shred the Duck

Remove the duck legs from the pot and let them cool slightly. Once cool enough to handle, shred the meat, discarding the skin and bones.

In a bowl, mix the shredded duck meat with the cooking fat, adding brandy or cognac. Adjust seasoning with salt and pepper to taste.

Transfer the rillettes to a serving dish or ramekins. Cover with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld. Serve garnished with fresh parsley.
