Preparation

Prepare the Meat

Cut the pork shoulder and fatback into small cubes. Place them in a large bowl.

Sauté Aromatics

In a skillet, melt a tablespoon of butter over medium heat. Add the onions and garlic, sauté until softened, about 5 minutes.

Mix Ingredients

Add the sautéed onions and garlic to the bowl with the pork. Stir in the chicken livers, thyme, parsley, salt, pepper, allspice, and cognac. Mix until well combined.

Cooking

Preheat Oven

Preheat your oven to 350°F (175°C).

Transfer to Dish

Grease the pâté dish with butter and fill it with the meat mixture, pressing down to pack it tightly.

Bake

Cover the dish with aluminum foil and place it in a baking pan filled with water. Bake for about 1.5 hours, or until the internal temperature reaches 160°F (70°C).

Cool and Serve

Remove from the oven, let cool at room temperature, then refrigerate for at least 4 hours or overnight before serving.
