Sauté the Aromatics
In a large skillet, melt half of the butter over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent, about 5 minutes.
Cook the Chicken Livers
Increase the heat to medium-high and add the chicken livers to the skillet. Cook, stirring occasionally, until the livers are browned on the outside but still slightly pink in the center, about 5-7 minutes.
Deglaze the Pan
Pour in the brandy or cognac and cook for another 2-3 minutes, scraping the bottom of the pan to release any browned bits. Remove from heat and let cool slightly.
Blend the Mixture
Transfer the liver mixture to a food processor. Add the remaining butter, heavy cream, salt, black pepper, and thyme. Blend until smooth and creamy, scraping down the sides as necessary.
Chill the Mousse
Transfer the mousse to a serving dish or individual ramekins. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.
Serve
Once set, serve chilled with toasted bread or crackers. Garnish with additional thyme if desired.
