In a large skillet, melt half of the butter over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent, about 5 minutes.

Pour in the brandy or cognac and cook for another 2-3 minutes, scraping the bottom of the pan to release any browned bits. Remove from heat and let cool slightly.

Transfer the liver mixture to a food processor. Add the remaining butter, heavy cream, salt, black pepper, and thyme. Blend until smooth and creamy, scraping down the sides as necessary.

Transfer the mousse to a serving dish or individual ramekins. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.
