Mix the Ingredients

In a large mixing bowl, combine the grated sharp cheddar cheese, softened cream cheese, mayonnaise, diced pimentos, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are fully incorporated and the mixture is creamy. Taste and adjust seasoning if necessary.

Prepare the Bread

Spread butter on one side of each slice of bread. Place half of the bread slices butter-side down on a clean surface.

Add Pimento Cheese

Spread a generous amount of the pimento cheese mixture on the unbuttered side of each slice of bread on the surface. Top with the remaining slices of bread, butter-side up, to form sandwiches.

Prepare the Potatoes

Wash and peel the russet potatoes. Cut them into thin strips to form fries, about 1/4 inch thick.

Fry the Potatoes

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Carefully add the cut potatoes in batches and fry until they are golden brown and crispy, about 4-5 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt immediately.
