Place the bottle of Chardonnay Bouchaine in the refrigerator for at least 1 hour before serving.

Chill the Chardonnay

Shuck the fresh oysters carefully, placing them on a bed of ice on a serving platter.

Prepare the Oysters

In a small bowl, combine vinegar, shallots, and pepper. Set aside to allow flavors to meld.

Prepare the Mignonette Sauce

Cut the lemon into wedges and arrange them on the platter with the oysters.

Add Lemon Wedges

In a large skillet, heat olive oil over medium heat. Add sliced Andouille sausage and cook until browned.

Cook the Shrimp and Sausage

Add diced onion, garlic, and bell peppers to the skillet. Sauté until the vegetables are softened.

Add Vegetables

Stir in the shrimp and Cajun seasoning. Cook until the shrimp are pink and cooked through, about 5-7 minutes. Season with salt and black pepper to taste.

Season the Mixture

In a deep pan, heat oil for frying. Carefully place the beignets into the hot oil and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Fry the Beignets

Generously sprinkle powdered sugar over the warm beignets before serving.

Dust with Powdered Sugar

Place the chocolate sauce in a small bowl for dipping alongside the beignets.
