Bacon-Infused Evan Williams
Infuse the Bourbon
In a medium saucepan, cook the chopped bacon over medium heat until crispy. Remove the bacon and let it drain on paper towels. Pour the bacon fat into a heatproof container and let it cool slightly. Combine the warm bacon fat with the Evan Williams bourbon in the container and stir well. Allow the mixture to sit at room temperature for 4-6 hours, then strain through a fine mesh sieve or cheesecloth to remove any solids.
Maple Syrup Mixture
Prepare the Maple Syrup Mixture
In a small bowl, combine the maple syrup and water. Stir until well mixed and set aside.

Once the bacon-infused bourbon is ready, take a mixing glass and add 2 dashes of Angostura bitters.
Assembly
Serve
Strain the mixture into a chilled cocktail glass. Garnish with two crispy bacon strips on the rim and sprinkle with maple sugar if desired.
