Hot Pepper Mix (make ahead)

Combine 1/2 cup water and 1/2 cup granulated sugar in a small saucepan over medium heat.

Stir until the sugar dissolves and the mixture comes to a gentle simmer (about 2–3 minutes). Do not boil vigorously.

Add the sliced jalapeño and optional habanero/Fresno and simmer for 3 minutes to infuse heat. Add the lime zest if using for brightness.

Remove from heat and let the syrup steep with the peppers until it reaches desired heat (10–20 minutes for medium, longer for more heat). Taste carefully; it will be spicy.

Strain the syrup through a fine-mesh sieve into a clean container, pressing on solids to extract liquid. Discard solids. Cool to room temperature, then refrigerate. Yields about 5–6 oz; stores for up to 2 weeks refrigerated.
Spicy Rim Preparation

On a small plate, mix 1 tablespoon coarse salt with 1 teaspoon chili powder (or 1 tsp Tajín). Adjust ratio to taste.

Rub a lime wedge around the rim of a rocks or coupe glass to moisten it.

Cocktail Assembly

Fill a cocktail shaker with 1 cup ice.

Add 2 oz Espolón Blanco tequila, 1 oz Cointreau, 1 oz fresh lime juice, and 1/2 oz hot pepper syrup into the shaker.

Dry shake (no ice) vigorously for 5–7 seconds to combine and slightly emulsify, then add ice and shake hard for 10–12 seconds until well chilled.

Fill the prepared glass with fresh ice or a large ice cube.

Double strain (to remove small ice shards) the cocktail into the glass over the ice.

Garnish with a thin jalapeño slice or lime wheel on the rim or floated on top.

Serve immediately. Taste: if you prefer more heat, add 1/4–1/2 oz additional hot pepper syrup and stir gently.
