Method

House Fresh Lime Mix

    Juice and combine

    Roll limes on the countertop to loosen juices, cut in half and juice until you have 4 oz (about 8–10 limes). Strain through a fine mesh sieve to remove pulp and seeds into a measuring cup.

    Make simple syrup (if needed)

    If you don't have pre-made simple syrup, combine equal parts granulated sugar and water (for this recipe: 4 oz sugar + 4 oz water) in a small saucepan, warm over medium heat, stirring until sugar dissolves. Cool to room temperature.

    Finish mix

    Combine 4 oz fresh lime juice with 4 oz cooled simple syrup in a clean bottle or jar. Shake or stir to combine. Refrigerate until ready to use. This yields about 8 oz house fresh lime mix (1 oz used per cocktail).

Cocktail Assembly

    Prepare glass

    Rub a lime wedge around the rim of a rocks or coupe glass. Pour the 1 tsp of coarse salt onto a small plate and dip the rim into the salt to coat. Set the glass aside.

    Build and shake

    In a cocktail shaker, add 1 cup of ice, 2 oz Espolón Blanco tequila, 1 oz Cointreau, and 1 oz house fresh lime mix. Secure the lid and shake vigorously for 10–15 seconds until the shaker is cold to the touch and well-chilled.

    Strain and serve

    Double-strain (using the built-in shaker strainer or a Hawthorne plus a fine-mesh strainer) into the prepared glass over fresh ice if serving on the rocks, or neat into the chilled coupe. Garnish with a lime wheel or wedge on the rim.

    Optional adjustments

    If you prefer a slightly sweeter margarita, increase the house fresh lime mix to 1.25 oz. For a tarter drink, reduce it to 0.75 oz. Adjust salt rim to taste.
