Prepare the Mushrooms

Preheat your oven to 200°C (400°F). Clean and slice the assorted mushrooms, then place them in a large bowl.

Caramelize the Shallots

Thinly slice the shallots. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the shallots and cook, stirring occasionally, until they are golden brown and caramelized, about 10 minutes. Remove from heat and set aside.

Roast the Mushrooms

Drizzle the remaining olive oil over the mushrooms, add fresh thyme, and season with salt and pepper to taste. Spread the seasoned mushrooms on a baking sheet and roast in the preheated oven for about 20 minutes or until they are golden and tender.

Combine Ingredients

In a large mixing bowl, combine the roasted mushrooms, caramelized shallots, and chopped Italian parsley. Toss gently to combine.

Add the Cheeses

In a baking dish, layer the mushroom mixture and sprinkle over the fontina, taleggio, and mozzarella cheeses evenly. Top with grated Grana Padano.

Bake

Place the baking dish in the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

Remove from the oven, allow to cool slightly, and serve warm. Enjoy your Funghi dish!
