Boneless Buffalo Wings
Marinate
Place the cut chicken pieces in a bowl. Add 1/2 cup buttermilk and 1 tablespoon hot sauce. Stir to coat, cover, and refrigerate for 20–30 minutes (or up to 2 hours). This tenderizes and flavors the chicken.
Prepare Coating
In a shallow bowl or wide dish, whisk together 3/4 cup all-purpose flour, 1/4 cup cornstarch, 1 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon paprika, 1 teaspoon salt, and 1/2 teaspoon black pepper.
Heat Oil
Pour about 3 cups vegetable oil into a deep skillet or saucepan and heat to 350°F (175°C). If you don't have a thermometer, heat until a small pinch of flour sizzles and bubbles immediately.
Dredge and Fry
Remove chicken from the marinade, letting excess drip off. Toss pieces in the flour mixture to evenly coat, shaking off excess. Fry chicken in batches (do not overcrowd) for 4–5 minutes per batch, until golden brown and internal temperature reaches 165°F (74°C). Transfer to a wire rack or paper towel-lined plate to drain.
Make Buffalo Sauce
While the final batch fries, melt 2 tablespoons unsalted butter in a small saucepan or microwave-safe bowl. Stir in 1/2 cup hot sauce and 1 teaspoon honey (optional) until smooth and combined; keep warm.
Toss Wings in Sauce
Place the drained fried chicken in a large bowl. Pour the warm buffalo sauce over the chicken and gently toss until all pieces are evenly coated. Serve immediately.

Prepare Potatoes
Rinse cut potato fries under cold water until water runs clear to remove surface starch. Pat dry thoroughly with paper towels — moisture will cause oil splatter.
Alternative Oven Method
If you prefer baked fries: toss potato sticks with 1 tablespoon oil and a pinch of salt, spread in a single layer on a baking sheet, and bake at 425°F (220°C) for 25–30 minutes, flipping once, until crisp and golden.
Accompaniments
Arrange 3 celery sticks and 1/4 cup ranch or blue cheese dressing on the plate. Add a lemon wedge if desired for a bright squeeze.
Beverage
Fill a glass with 1 cup ice, pour 12 oz regular soda of choice over the ice, and serve chilled alongside the wings and side.
