Method
Chicken Sandwich (fried chicken)
Prep the chicken
Pound the chicken breast to an even thickness about 1/2 inch using a meat mallet or rolling pin (place in a zip-top bag first). This ensures even cooking.
Marinate
In a bowl combine buttermilk and egg; whisk until blended. Add the chicken to the mixture, cover, and refrigerate for 20–30 minutes (can be up to 2 hours for more flavor).
Make dredge
In a shallow dish combine flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper. Mix thoroughly.
Coat the chicken
Remove chicken from buttermilk mixture, letting excess drip off. Dredge thoroughly in the seasoned flour mixture, pressing so the coating adheres. For extra crispiness, dip quickly back into the buttermilk-egg, then again into the flour mixture for a double coat.
Assemble the sandwich
Toast the brioche bun cut-sides down in a dry skillet or under a broiler until lightly browned. Spread mayonnaise on the bottom bun, place leaf lettuce, then the fried chicken, top with tomato slices, and cover with the top bun. Serve immediately.
Side — French Fries
Prep the potato
Peel (optional) and cut the russet potato into 1/4–3/8-inch sticks. Rinse the cut fries under cold water until water runs clear to remove excess starch, then pat completely dry with paper towels.
Fry the potatoes
Heat 2 cups of oil in a deep skillet or pot to 325°F (160°C). Blanch the fries in batches for 3–4 minutes until soft but not browned. Remove and drain on paper towels. Increase oil temperature to 375°F (190°C) and fry the blanched fries again in batches for 2–3 minutes until golden and crisp. Drain and immediately season with 1/2 tsp salt.
Soda
Fill a 12 oz glass with 4 ice cubes and pour 12 oz of the chosen carbonated soda over the ice. Serve chilled alongside the sandwich and fries.
