Prepare Flavor Base

Make simple syrup (if not using store-bought)

Combine 1/2 cup sugar and 1/2 cup water in a small saucepan. Heat over medium, stirring until sugar dissolves. Let cool to room temperature. This yields about 1/2 cup simple syrup used in the recipe.

If using fresh fruit puree: wash and hull fruit as needed. Place 1/4 cup fruit in a blender and puree until smooth. Strain through a fine mesh sieve if you prefer a clear soda, or leave unstrained for texture.

If using herbs: gently bruise 4 leaves with the back of a spoon or in your palm to release oils. If using citrus slices, thinly slice or cut a wedge for muddling and garnish.

Assemble Soda

Fill a tall glass with about 1 cup of ice cubes.

Add 1/2 cup cold simple syrup (or 1/2 cup flavored syrup) to the glass. If you prefer a less sweet soda, reduce to 1/4 cup.

Add 1 tablespoon fresh lemon juice for brightness, if using.

Add 1/4 cup fruit puree or 1/4 tsp extract (if using). If using bruised herbs or a citrus slice for more aroma, add them now and lightly stir to combine with the syrup.

Slowly pour 4 cups cold carbonated water over the syrup and flavor mixture. Pour gently to preserve as much carbonation as possible and to mix the ingredients without vigorous stirring.

Stir gently once or twice with a long spoon to incorporate syrup and flavor into the carbonated water. Taste and adjust sweetness or acidity: add up to 2 tbs more simple syrup for sweetness or a little more lemon juice to brighten.

Finish & Serve

Garnish with a citrus wheel or wedge and a sprig of herb. If using fruit puree, you can reserve a small spoonful of puree to drop on top for visual appeal.

Serve immediately while cold and fizzy. If making multiple servings in a pitcher, mix syrup and flavor in the pitcher first, then add chilled carbonated water just before serving to retain fizz.
