Prepare scrapple

Slice the scrapple into twelve 1/3-inch–to–1/2-inch thick slices. Pat each slice dry with paper towels to remove excess moisture—this helps achieve a crisp crust.

Beat eggs

In a shallow bowl large enough to hold a scrapple slice, whisk together 4 large eggs, 4 tablespoons milk, 1/2 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper until smooth and slightly frothy.

Pan-fry scrapple

Place a large nonstick or cast-iron skillet over medium-high heat. Add 1 tablespoon neutral oil and 1 tablespoon unsalted butter. When the butter foams and the pan is hot, add scrapple slices in a single layer (work in batches if necessary). Fry 3–4 minutes per side, pressing gently with a spatula, until deeply browned and crisp on both sides. Transfer cooked slices to a plate and keep warm in a low oven (200°F/95°C) while you finish others.

Cook eggs (optional styles)

Reduce heat to medium. You can cook eggs two ways depending on preference: 1) Scrambled: Pour the egg mixture into the pan, scramble gently until just set but still moist (about 1–2 minutes). 2) French-toast style: Dip each fried scrapple slice briefly into the egg mixture, coating both sides, then return to the pan and cook 30–45 seconds per side until egg is set and golden. For a separate fried egg, spoon a little butter into the pan and fry eggs to desired doneness. The recipe assumes scrambling for assembly—cook eggs until just set.

Toast bread and assemble condiments

While finishing eggs, butter the bread lightly (use remaining 1 tablespoon butter if desired) and toast in a separate skillet or toaster until golden. Spread 1 teaspoon mayonnaise on each bottom slice of bread and 1/2 teaspoon mustard on each top slice (adjust to taste).

Assemble sandwiches

Place 1–2 slices of fried scrapple on each bottom bread slice (about 3 oz scrapple per sandwich). Top scrapple with a portion of the scrambled eggs (divide evenly), then add a slice of cheddar if using so it melts from the residual heat. Add tomato slices and lettuce if desired. Close with the top slice of bread.

Finish and serve

If you like, return assembled sandwiches to the skillet for a quick press: place sandwich in a skillet over medium-low heat, press gently with a spatula or weighted panini press, and cook 30–60 seconds per side to warm through and slightly melt the cheese. Slice the sandwiches in half and serve immediately.
