Prepare and cook chicken
If the chicken breasts are very thick, butterfly them or pound to an even 3/4-inch thickness. Pat dry with paper towels. In a small bowl combine 2 tbs olive oil, 1 tsp Italian seasoning, 1 tsp salt and 1 tsp black pepper. Rub the mixture over both sides of the chicken breasts.
Heat a large skillet over medium-high heat. Add a thin film of olive oil or nonstick spray. When the pan is hot, add the chicken breasts and cook undisturbed 4–5 minutes per side, until golden brown and internal temperature reaches 165°F (74°C). Reduce heat if the outside is browning too quickly. Remove chicken to a cutting board and let rest 5 minutes, then slice to fit sandwiches.
Garlic Sauce
Make the garlic sauce
In a medium bowl combine 1 cup mayonnaise and 1 cup Greek yogurt. Add 4 minced garlic cloves, 2 tbs lemon juice, 1 tbs extra-virgin olive oil, 2 tbs grated Parmesan, 2 tbs chopped parsley, 1 tsp salt and 1 tsp black pepper. Whisk until smooth and taste; adjust salt, pepper or lemon as desired. Chill in refrigerator for at least 10 minutes to let flavors meld (can be made up to 24 hours ahead).
Assembly & Melt
Place buttered rolls cut-side up on a baking sheet. Toast under the broiler 1–2 minutes until lightly golden — watch closely to avoid burning.
Spread a generous layer (about 2–3 tbs each) of garlic sauce on both bottom and top halves of each toasted roll.
Divide the sliced chicken evenly between the rolls, arranging slices on the bottom halves. If using roasted red peppers or arugula, add them on top of the chicken now.
Top the chicken on each sandwich with about 3/4 cup (approx. 3/8 cup per sandwich) mozzarella, covering the chicken evenly.
Place the baking sheet under the broiler for 1–2 minutes, or return to 450°F oven for 3–5 minutes, until the mozzarella is melted and bubbling. Remove when cheese is melted and edges are lightly browned.
Close the sandwich with the top roll, press gently, slice in half if desired, and serve immediately with extra garlic sauce on the side.
