Tenderize and season steak

If the steak is thicker than 1/2 inch, slice it across the grain into thin 1/8–1/4-inch slices or place between plastic and pound to 1/4-inch. Pat dry. Combine salt, black pepper, and garlic powder and sprinkle evenly over both sides of the sliced steak.

Sear the steak

Heat a large skillet or cast-iron pan over medium-high heat until very hot. Add 1 tablespoon olive oil. Add the seasoned steak in a single layer (work in two batches if needed) and sear for 1–2 minutes without moving, then stir and cook another 30–60 seconds until just browned and cooked through (medium-rare to medium). Remove steak to a bowl and keep warm.

Prepare rolls

Preheat the broiler (or oven to 425°F/220°C). Split hoagie rolls and spread about 1/2 tablespoon butter inside each half. Place rolls cut-side up on a baking sheet and toast under the broiler 1–2 minutes until lightly golden. Watch carefully to prevent burning.

Warm the sauce

Warm the pizza sauce in a small saucepan over low heat for 3–5 minutes until hot and slightly thickened. Stir in dried oregano and red pepper flakes. Taste and adjust seasoning.

Assemble sandwiches

Divide the cooked steak evenly among the toasted roll bottoms (about 4 oz steak per sandwich). Spoon approximately 1/4 cup warmed pizza sauce over the steak on each sandwich. Sprinkle about 1/2 cup shredded mozzarella over each sandwich, then a light dusting (about 1 tablespoon total divided) of grated parmesan.

Melt cheese

Place the assembled sandwiches on the baking sheet and slide under the broiler (or into the 425°F oven) for 1–3 minutes until the cheese is melted and bubbling. If using an oven, bake 3–5 minutes. Remove when cheese is melted and edges of bread are slightly crisp.

Finish

If using, top sandwiches with sliced fresh basil and roasted peppers or banana peppers. Drizzle with a little olive oil if desired. Close sandwiches with the toasted roll tops.

Serving

Serve the pizza steaks hot. Offer extra pizza sauce, red pepper flakes, or grated parmesan at the table.
