Blend the fruit

Place the fresh pineapple chunks and fresh pineapple juice into a blender. Add the fresh lime juice. Pulse on high for 8–10 seconds until the mixture is smooth but still slightly textured. This creates a bright, fresh pineapple base.

If you prefer a silkier drink, strain the blended pineapple through a fine-mesh sieve into a measuring cup, pressing with the back of a spoon to extract as much liquid as possible. Discard solids or reserve for another use.

Add the white rum, coconut rum, and simple syrup to the pineapple base in the measuring cup or back in the blender.

If using the blender: add the crushed ice and pulse 3–4 times just to chill and combine (do not fully liquefy; you want a slightly slushy consistency). If not using a blender, fill a cocktail shaker with crushed ice, pour the pineapple-alcohol mixture in, and shake vigorously for 10–12 seconds until well chilled.

Serve & Garnish

Fill a chilled highball or tiki glass halfway with crushed ice. Pour the blended/shaken pineapple cocktail over the ice.

Top gently with 2 oz club soda or sparkling water if you want a light fizz; stir once gently with a bar spoon to integrate (do not over-stir to preserve carbonation).

Garnish with a pineapple wedge on the rim, a sprig of fresh mint pushed into the drink, and optionally hang a dehydrated pineapple wheel on the rim for presentation.

Serve immediately with a straw and enjoy.
