Method
Omelet base

In a medium bowl, crack 3 large eggs. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1 teaspoon freshly ground black pepper. Whisk vigorously until fully combined and slightly frothy, about 20–30 seconds.

Place a nonstick skillet (8–10 inch) over medium heat. Add 1 tablespoon unsalted butter and let it melt, swirling to coat the pan evenly. Heat until butter foams but does not brown.
Meat (choose one)
Cook omelet
Sprinkle the warmed meat evenly over one half of the omelet (use about 1/2 cup). Then sprinkle 1/2 cup shredded cheese over the same half.
Fold the omelet in half over the fillings using the spatula, tuck the edges, and let cook for another 20–30 seconds to melt the cheese and finish cooking. Turn off the heat.
Toast or biscuit
While eggs cook, toast 1 slice of bread in a toaster until golden, spread 1 teaspoon butter on top. Or warm a buttermilk biscuit in an oven at 350°F (175°C) for 5–7 minutes or microwave for 20–30 seconds until heated through.
Serve
Slide the folded omelet onto a plate alongside the toast or biscuit. Garnish with 1 tablespoon chopped fresh chives or parsley and a dash of hot sauce to taste if desired. Serve immediately.
