Prepare noodles
If using fresh rice noodles, loosen them gently by separating any stuck pieces and arrange in a large shallow bowl. If they are chilled, let them sit at room temperature for 10–15 minutes to loosen. If using packaged fresh noodles, warm briefly in the microwave (10–15 seconds) or dip in warm water for 30–60 seconds until pliable but not mushy. Drain and set aside.
Mix sauce
In a small bowl, whisk together light soy sauce, dark soy sauce, oyster sauce, fish sauce, sugar, and ground pepper until sugar dissolves. Taste and adjust — the sauce should be savory with a hint of sweet and salty. Set aside with basil ready to add at the end.
Vegetables & Aromatics
Prep vegetables: make sure all vegetables are cut as described so they cook quickly and evenly. Keep vegetables separated by type for staged cooking.
Stir-fry firm vegetables: add broccoli florets, green beans, and carrot matchsticks. Stir-fry on high heat for 2–3 minutes, tossing continuously until they begin to soften but remain crisp-tender.
Add bell peppers and zucchini: stir-fry another 1–2 minutes until peppers begin to blister at the edges but are still bright and slightly crunchy. If vegetables are sticking, add the remaining 1 tablespoon oil and a splash (1–2 tbs) of water to deglaze and create steam.
Protein (optional)
Cook protein separately if using: push vegetables to one side of the wok. Add the optional shrimp or thin-sliced chicken/tofu to the empty side and stir-fry until just cooked through (shrimp pink and opaque, chicken no longer pink), about 2–3 minutes. If using the beaten egg, make a small well in the wok, add a teaspoon oil and pour in the egg, scramble briefly, then mix into the vegetables and protein.
Combine & Finish
Add noodles and sauce: move vegetables and protein to the sides leaving a flat center. Add the noodles to the center, pour the prepared sauce over the noodles, and use tongs or two spatulas to gently toss everything together. Keep the heat high; toss and fold quickly to coat noodles and heat through without breaking them. If the noodles are clumped, add 1–2 tablespoons warm water and gently work them apart.
Toss in scallions, optional chiles, and basil: when the sauce is mostly absorbed and noodles are heated (about 1–2 minutes), add the scallion pieces, sliced chile if using, and the 1.5 cups of Thai basil. Toss once or twice until basil wilts and releases aroma.
Adjust seasoning: taste and add a dash more fish sauce, soy, or a pinch of sugar if needed. Finish with a crack of pepper.
Serve immediately: transfer to plates or a serving platter. Garnish with extra basil, lime wedges, and optional crispy shallots or peanuts. Encourage diners to squeeze lime over their portion just before eating.
