Slice and marinate
Trim any fat from the chicken breasts and slice them thinly across the grain into 1/8–1/4 inch strips. In a medium bowl combine 2 tbs olive oil, soy sauce, Worcestershire sauce, garlic powder, onion powder, 1/2 tsp black pepper and 1/2 tsp kosher salt. Add the sliced chicken and toss to coat. Let marinate 10–15 minutes at room temperature (or up to 1 hour in the fridge).
Cook chicken
Heat a large skillet or cast-iron pan over medium-high heat until hot. Add 1 tbs vegetable oil and swirl to coat. Add the marinated chicken in a single layer (work in batches if necessary) and sear without disturbing for 1–2 minutes, then stir and continue cooking 3–4 minutes until cooked through and lightly browned. Remove chicken to a plate and keep warm.

Sauté vegetables
Wipe the skillet if very browned, then add 1 tbs unsalted butter and the remaining 1 tbs olive oil over medium heat. Add the sliced onion and bell pepper and cook, stirring occasionally, until softened and beginning to brown, about 6–8 minutes. Add the mushrooms, 1/4 tsp salt and 1/4 tsp black pepper and cook another 3–4 minutes until mushrooms are tender. Push vegetables to the side of the pan or transfer to the plate with chicken.
Combine
Return the cooked chicken to the skillet with the vegetables and toss together over medium heat for 1 minute to rewarm and combine flavors.

Assemble and melt cheese
Split the hoagie rolls lengthwise leaving a hinge. If desired, spread mayonnaise (and hot sauce mixed into it) on the cut sides. Pile the warm chicken and vegetable mixture evenly into the two rolls. Top each sandwich with two provolone slices (overlapping). Cover the skillet with a lid or transfer sandwiches to a baking sheet and place under a preheated broiler for 1–2 minutes until cheese is melted and bubbly. If using the skillet, place a lid over the sandwiches in the skillet or place a metal bowl over them and heat on low for 1–2 minutes until cheese melts.
Finish and serve
Remove the sandwiches from heat. Let rest 1 minute, then close rolls and slice each hoagie in half if desired. Serve hot.
