Steak & Marinade
Slice and Marinate Steak
If steak is not pre-sliced, partially freeze for 30–40 minutes until firm, then slice thinly against the grain into ~1/8–1/4 inch strips. Toss slices in a bowl with 1 tbsp olive oil, 1 tbsp soy sauce, 1 tsp Worcestershire sauce, 1 tsp garlic powder, 1/2 tsp black pepper and 1/2 tsp salt. Let rest at room temperature for 10–15 minutes while you prepare vegetables.
Cook Steak
Heat a large heavy skillet or cast-iron pan over high heat until very hot (2–3 minutes). Add the marinated steak in a single layer (work in batches if necessary) and sear, stirring occasionally, until browned with some caramelization, about 2–3 minutes per batch. Remove cooked steak to a plate and keep warm. Do not overcook—thin slices cook quickly.

Sauté Onions & Peppers
Wipe the hot pan (if necessary) and return to medium-high heat. Add 1 tbsp butter or oil. Once shimmering, add the sliced onions and peppers in an even layer. Season with 1/4 tsp salt and 1/4 tsp black pepper. Sauté, stirring occasionally, until softened and lightly caramelized, about 6–8 minutes. Remove from heat.
Bread & Cheese
Prepare Rolls
Preheat oven broiler or toaster oven. Split 4 hoagie rolls lengthwise, leaving a hinge if desired. Lightly toast under the broiler for 1 minute until just golden (watch closely).
Assemble & Melt Cheese
Spoon an even portion of the steak, onion, and pepper mixture into each roll. Top each portion with 2 slices of provolone. If using American cheese for extra melt, add one slice beneath the provolone. Place assembled sandwiches on a baking sheet and broil 1–2 minutes until cheese melts and edges bubble. Alternatively, cover pan with a lid for 1 minute on low heat to melt cheese.
Finishing & Optional
Make Quick Sauce (Optional)
Stir together 1/2 cup mayonnaise with 1 tsp hot sauce (if using) to make a simple spread. Adjust heat to taste.
Dress & Serve
Spread a thin layer of mayo or the quick sauce inside each toasted roll if desired. Add pickled jalapeños or pickles to taste. Serve the cheese steak hoagies hot, one sandwich per person.
