Prepare ingredients
Whisk eggs
Crack 3 large eggs into a medium bowl. Add 2 tablespoons milk (this gives a slightly creamier texture), 1 teaspoon salt, and 1 teaspoon freshly ground black pepper. Whisk vigorously until the mixture is homogenous, slightly frothy, and pale yellow (about 20–30 seconds).
Cook omelette
Heat pan
Place a nonstick or well-seasoned 8–10 inch skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt, tilting the pan to coat the surface. The butter should foam but not brown.
Add cheese
Sprinkle the grated cheddar evenly over one half of the omelette. If using, sprinkle the chopped chives over the cheese.
Fold
Using the spatula, lift the opposite edge of the omelette and fold it over the cheese-covered half, creating a half-moon. Press gently for 5–10 seconds to help the cheese begin to melt.
Finish cooking
Let the folded omelette cook for another 30–60 seconds on low heat so the cheese melts through but the eggs remain tender. Avoid overcooking; the interior should be soft and slightly creamy.
Slide and serve
Carefully slide the omelette onto a warm plate. Taste and add finishing salt if desired and serve immediately with hot sauce or salsa if you like.
