Prepare hash-browns

Thaw frozen shredded hash-browns fully and squeeze out excess moisture using a clean kitchen towel or paper towels. Removing moisture helps achieve a crisp exterior.

Heat a large nonstick or cast-iron skillet over medium-high heat. Add 1 tablespoon vegetable oil and 1 tablespoon butter and let butter foam but not brown.

Add the drained hash-browns to the skillet, press into an even thick layer, then sprinkle with 1 teaspoon salt and 1/2 teaspoon black pepper. Cook undisturbed for 5–7 minutes to form a golden crust.

Once the bottom is golden and crisp, flip sections of the hash-browns (or invert using a plate) so the other side can brown. Add remaining 1 tablespoon butter around the edges if the pan looks dry. Cook another 5–7 minutes until crisp and cooked through. Reduce heat to medium-low and keep warm while you prepare vegetables.

Vegetable Mix

While the hash-browns cook, heat a separate large skillet over medium heat and add 1 tablespoon olive oil.

Add the thinly sliced onion and green pepper to the skillet. Sauté, stirring occasionally, until softened and beginning to caramelize, about 6–8 minutes.

Add the sliced mushrooms and continue cooking 4–5 minutes until mushrooms release moisture and start to brown.

Stir in the minced garlic, diced jalapeño and smoked paprika (if using). Cook 1 minute until fragrant.

Fold in the diced tomato and cook 1–2 minutes just to warm through — you want the tomato to stay slightly firm so the mixture isn’t watery. Season the vegetable mixture lightly with a pinch of salt and a few grinds of black pepper. Taste and adjust heat by adding more jalapeño or removing seeds next time if too spicy.

If using cheese, sprinkle shredded cheddar over the hot hash-browns, then spoon the vegetable mixture evenly over and allow residual heat to melt the cheese (1–2 minutes). Alternatively, stir vegetables directly into the hash-browns in the pan to combine, then top with cheese.

Finishing & Serving

Toast the bread or warm the biscuits according to package or recipe directions. Butter lightly.

Scoop a heaping mound of the hash-browns topped with the grilled vegetable mixture onto each plate (divide into two large servings). Garnish with sliced chives or green onions and drizzle hot sauce if desired.

Serve immediately with the toast or biscuit on the side. Enjoy while hot.
