Method

Toast buns
Butter the cut sides of the brioche buns. Warm a large skillet over medium heat and toast the buns, buttered side down, until golden and slightly crisp, about 1–2 minutes. Set aside, cut sides up.
Slice tomatoes and prep lettuce
Wash and pat dry the lettuce leaves. Slice the tomatoes into 1/4-inch thick rounds. Keep lettuce and tomato ready for assembly.
Chicken
Prepare chicken
If breasts are thick, butterfly or pound to even thickness about 1/2 inch. Pat chicken dry with paper towels. Rub with olive oil and season evenly on both sides with smoked paprika, garlic powder, onion powder, kosher salt, and black pepper.
Cook chicken
Heat a large skillet or grill pan over medium-high heat until hot. Add a light slick of oil if using a skillet. Cook chicken 4–6 minutes per side (depending on thickness) until an internal temperature of 165°F (74°C) is reached and juices run clear. Remove from heat and let rest 5 minutes, then slice or leave whole for the sandwich.
Signature honey hickory sauce
Combine and simmer
In a small saucepan combine ketchup, honey, apple cider vinegar, hickory liquid smoke, brown sugar, Worcestershire sauce, ground mustard, hot sauce (if using), and salt. Whisk to combine.
Bring the mixture to a gentle simmer over medium-low heat, stirring occasionally. Simmer 5–7 minutes until slightly thickened and glossy. Taste and adjust salt, honey, or vinegar for balance. Remove from heat and let cool slightly—sauce will thicken more as it cools.
Specials sauce (creamy tangy sauce)
Mix sauces
In a small bowl combine mayonnaise, Greek yogurt, dill pickle relish, apple cider vinegar, smoked paprika, garlic powder, salt, and black pepper. Whisk until smooth. Refrigerate while other components finish so flavors meld.
Assemble sandwiches
Spread about 1–2 tablespoons of the specials sauce on the bottom half of each toasted bun.
Place a lettuce leaf (or two folded to fit) on top of the sauce, then add a few tomato slices (1–2 per sandwich).
Place the cooked chicken breast onto each assembled bun. Spoon 2–3 tablespoons of the warm signature honey hickory sauce over the chicken (more to taste).
Spread a light smear (optional) of the specials sauce on the top bun, then close the sandwich. Press lightly and serve immediately.
