Form patties

Divide the 1 lb ground beef into four equal portions (approximately 4 oz each). Gently form each portion into a loose patty about 3.5–4 inches in diameter and roughly 3/4 inch thick. Make a shallow dimple in the center of each patty with your thumb to reduce puffing while cooking.

Season both sides of each patty evenly with 1 tsp kosher salt and 1/2 tsp freshly ground black pepper. Lightly brush or toss the patties with 1 tbs Worcestershire sauce so the flavor penetrates the surface.

Cook bacon

Place a large skillet over medium heat. Add the 6 bacon strips in a single layer (cook in two batches if needed). Cook until crisp, turning occasionally, about 6–10 minutes depending on thickness. Transfer to a paper-towel-lined plate to drain and keep warm.

Prepare vegetables

While bacon cooks, slice the tomato into 4–6 thick slices, thinly slice the red onion, and wash and pat dry 2 leaves of iceberg lettuce. Set aside 4 pickle slices per burger (8 total).

Toast buns

Heat a separate skillet or griddle over medium heat. Spread 1 tbs unsalted butter evenly over the cut sides of the 2 buns. Toast buttered sides on the hot skillet until golden brown, 1–2 minutes. Remove and keep warm.

Make sauce

In a small bowl combine 3 tbs mayonnaise, 1 tbs yellow mustard, 2 tbs ketchup and 1 tsp optional hot sauce (if using). Stir until smooth. Taste and adjust seasoning as needed.

Cooking the Patties & Assembly

Cook patties

Heat the skillet or griddle to medium-high and add 1 tsp neutral oil. When shimmering, add the patties leaving space between them. Cook without moving for 3–4 minutes until a brown crust forms. Flip and cook 2–3 minutes on the second side for medium doneness. During the last minute of cooking, place a slice of cheddar cheese on each patty (use two patties per burger: 2 patties × 1 slice each = 2 slices per assembled burger, plus use American cheese slices on top if desired). If assembling double cheeseburgers, stack two patties on each bun.

For a double cheeseburger, place one cheese-topped patty on the bun bottom, add two strips of cooked bacon, then stack the second cheese-topped patty on top. Add the remaining bacon strips on top of the second patty if you prefer more bacon.

Assemble burger

Spread a generous spoonful of sauce on the toasted bun bottoms. Add iceberg lettuce leaf, 2 tomato slices, a few red onion rings, and 4 pickle slices. Place the stacked double patties with bacon on top of the vegetables. Spread a small amount of sauce on the top bun and close the burger.

Serve

Cut the assembled burger in half if desired and serve immediately while hot. Provide extra ketchup or fries on the side.
