Prepare asparagus
Rinse the asparagus under cold water and pat dry. Trim the woody ends by bending each spear near the base until it snaps, or line them up and cut off the bottom 1 to 1.5 inches. If spears are thick, slice them diagonally into 2–3 pieces for even cooking; if thin, leave whole.
Blanch (optional for crisp-tender asparagus)
Bring a medium pot of salted water to a boil. Add asparagus and cook 1–2 minutes for thin spears or 2–3 minutes for thicker ones until bright green and just tender. Immediately transfer to a bowl of ice water to stop cooking. Drain and pat dry. (If you prefer to skip blanching, proceed to sauté raw asparagus for 4–6 minutes.)
Aromatics
Finely mince the garlic clove and zest the lemon (reserve juice). Chop parsley if using. Grate Parmesan if using.
Sauté asparagus
Heat a large skillet over medium-high heat. Add olive oil and butter. Once butter foams, add the asparagus in a single layer. Sauté, stirring occasionally, until asparagus is tender and has light brown spots: about 4–6 minutes for raw spears or 2–3 minutes to reheat blanched spears. Add the minced garlic in the last 30–45 seconds and cook until fragrant (do not burn).
Season asparagus
Remove skillet from heat briefly. Sprinkle salt and black pepper over the asparagus, add lemon zest and 1 tablespoon lemon juice (or to taste), and toss to combine. If using, stir in half the parsley and 1 tablespoon Parmesan now.
Cook eggs
In a separate nonstick skillet, heat a teaspoon of olive oil or a small knob of butter over medium-low heat. Crack eggs into the pan and cook to your preferred doneness: for sunny-side-up, cook gently until whites are set but yolks are runny, about 3–4 minutes (cover with a lid for even cooking); for over-easy, cook 2–3 minutes then flip and cook 15–30 seconds more; for fried-firm, cook 4–5 minutes and flip to finish. Season eggs with a pinch of salt and pepper.
Serve
Serve immediately while eggs are warm. This pairs well with crusty bread or toast to soak up the yolk. Leftovers: store asparagus and eggs separately in the refrigerator up to 2 days; reheat asparagus gently in a skillet.
