Prepare the peach
If using a whole peach, wash and pit it. Cut into about 6–8 slices and reserve one thin slice for garnish. In a mixing glass or sturdy shaker, add the remaining peach slices (about 1/2 cup).
Muddle
Add the simple syrup and lemon juice to the mixing glass with the peach. Add the fresh mint leaves (reserve a small sprig for garnish). Using a muddler or the back of a spoon, gently muddle the peaches and mint together 6–8 times until the peaches are crushed and the mint is aromatic. Be careful not to over-muddle the mint into bits — you want aroma without bitter green pieces.
Add spirits
Pour in the bourbon and the optional peach liqueur. Add a handful of crushed ice to the mixing glass to help chill and slightly dilute the mixture.
Shake or stir
If you have a cocktail shaker, transfer the mixture (including ice) into the shaker, cap, and shake vigorously for about 10 seconds to chill. If you don’t have a shaker, stir briskly in the mixing glass for 15–20 seconds.
Strain into glass
Fill a rocks glass or short tumbler about three-quarters full with crushed ice. Double-strain the cocktail into the glass using a Hawthorne/strainer and a fine mesh strainer (or strain through a sieve) to remove peach pulp and mint bits. If you prefer more texture, single-strain so small fruit pieces remain.
Top and finish
Top the drink with about 1.5 oz of soda water for brightness (adjust to taste). Gently stir once or twice to integrate.
Garnish and serve
Garnish with the reserved peach slice and a mint sprig. Optionally slap the mint sprig between your hands first to release aromatics before placing on the drink. Serve immediately with a short straw.
