Prepare glass

Select an old-fashioned glass (rocks glass). If you prefer the cocktail slightly chilled without dilution, place the glass in the freezer for 5–10 minutes or chill it briefly with the large ice cube.

Combine sugar and bitters

If using a sugar cube: place the sugar cube in the glass, add 2 dashes Angostura bitters and 1 dash orange bitters, then muddle until the cube is dissolved. If using 1/2 tablespoon simple syrup: add the syrup to the glass along with the bitters and stir briefly to combine.

Build the cocktail

Add 2 oz rye (or bourbon) to the glass. Add 0.25 oz maraschino liqueur and 0.25 oz amaro (optional — this gives the 'Rat Pack' herbal complexity).

Add ice and stir

Add a single large ice cube or sphere to the glass. Stir gently but thoroughly for 20–30 seconds (about 15–20 revolutions) until the spirit is slightly chilled and the drink has diluted by roughly 15–20%.

Garnish

Express the oils from an orange peel over the surface by holding the peel skin-side down and giving it a firm squeeze near the glass, then run the peel's rim around the glass and drop it in. Garnish with a maraschino cherry (Luxardo) on a pick.
