Rinse and cook rice

Rinse the short-grain rice under cold water, swirling and draining until the water runs mostly clear (about 4–6 rinses). Drain in a fine sieve for 15 minutes. Combine rinsed rice and 2.25 cups water in a medium saucepan. Bring to a boil over medium-high heat, then reduce to low, cover and simmer 15 minutes. Remove from heat and let sit, covered, 10 minutes.

Season rice

While the rice rests, warm 3 tablespoons rice vinegar, 2 teaspoons sugar and 1 teaspoon salt in a small saucepan or microwave just until sugar dissolves. Transfer cooked rice to a wide bowl, gently fold in the vinegar mixture with a rice paddle or spatula, fanning if possible to cool slightly. The rice should be warm, not hot. Keep covered with a damp towel while preparing other components.

Cucumber Salad

Slice the English cucumber in half lengthwise, scoop out seeds if very seedy, then thinly slice on a bias into 1/8–1/4" pieces. Place in a bowl and sprinkle with 1/4 teaspoon salt; toss and let sit 5 minutes, then drain any excess liquid.

Whisk together 1 tablespoon rice vinegar, 1 teaspoon soy sauce, 1 teaspoon sugar and 1 teaspoon sesame oil until sugar dissolves. Toss the drained cucumber with the dressing, add 1 tablespoon thinly sliced scallion and 1 teaspoon toasted sesame seeds. Taste and adjust salt or vinegar as needed. Chill briefly or keep at room temperature — should be crisp and slightly tangy.

Gochujang Butter Sauce

In a small skillet over low heat, melt 3 tablespoons unsalted butter until foaming but not browned. Stir in 2 tablespoons gochujang, 1 teaspoon honey, 1/2 teaspoon soy sauce, 1 teaspoon lime juice and 1/2 teaspoon sesame oil. Whisk until fully combined and warmed through, 1–2 minutes. Remove from heat. Taste and adjust sweetness or heat: add a pinch more honey for sweet or 1/2 teaspoon water to loosen if too thick. Reserve 1 teaspoon toasted sesame seeds for garnish.

Assembly & Finish

Prepare nori: If desired, lightly brush each nori sheet with a thin film of neutral oil and briefly toast in a dry skillet, oil-side down, over medium heat for 5–10 seconds until crisp but not burnt. This step softens the seaweed and adds sheen.

Lay one nori sheet shiny side down on a bamboo mat or clean surface. With wet hands, spread about 1/2 cup of warm seasoned rice in a rectangular strip down the center of the nori, leaving a 1/2" border at top and bottom. Press gently to form an even layer but do not compress hard — rice should remain slightly tender.

Place 2–3 tablespoons of the cucumber salad in a narrow line along the rice center. If using microgreens or shiso, layer a small handful over the cucumber. Do not overfill.

Drizzle 1 tablespoon (or to taste) of the warm gochujang butter sauce along the cucumber line. Reserve remaining sauce for serving.

Roll: Fold the bottom edge of the nori over the filling and roll tightly using the bamboo mat, pressing gently to shape a firm roll. Seal the top edge with a little water if needed. Repeat with remaining sheets.

To serve: Using a sharp, dampened knife, cut each roll into 6–8 pieces (for 4 nori sheets, you will get 24–32 pieces). Wipe the knife between cuts to keep slices clean. Arrange on a platter, drizzle more gochujang butter to finish and sprinkle the reserved toasted sesame seeds on top. Serve warm (rice slightly warm, sauce warm) with pickled ginger if desired.
